Our menus change each month so we use what is at
its best and in season and we try to source as locally as possible.
Most of our major ingredients come from the West Country whether
they are David Wood’s fantastic ducks from Bittescombe Farm
near Exmoor or Jo Edwards’ fresh herbs, shoots and leaves
which she grows especially for us at Castle Farm Organics, Midford
near Bath. We are always looking for the best.
Fish and shellfish are caught by day boats out of Beesands in South
Devon and St. Ives in Cornwall and are delivered to us overnight.
