sourcing fantastic ingredients then cooking them simply, with respect
for the essential flavours and classic combinations that have been
tried and tested over the years.
We were all too 'tricksy' in the 80’s and it is good that people
are more interested in where their food comes from now so want chefs
to enhance good raw ingredients without disguising everything in sauces
or by putting too many flavours together on the plate.”
